Twice Baked Potato Side Dish

I made a great side dish the other night that I wanted to share.  A little twist on mashed potatoes, this was creamy and delicious!!!  You can find the original recipe at http://www.sippitysup.com/mashed-potatoes-bacon-cheddar.

I halved the recipe and changed it up a bit.  Here is the version I made:

3 lbs. potatoes
4 oz. cream cheese
1/4 cup butter
1/2 cup sour cream
1/4 cup chopped green onion
1.5 cups cheddar cheese
salt/pepper to taste

Preheat oven to 350 degrees. Peel potatoes, cut into small chunks, and boil until tender, about 20 minutes.  Return to pan and mash.  Add remaining ingredients and stir, leaving 1/2 cup cheese aside.  Spray dish with cooking oil and add potatoes.  Top with remaining 1/2 cup cheese and bake for about 30 minutes, or until dish is heated through.

I served with pork chops!

I think the cream cheese is the secret ingredient (of course)!
