Chorizo, Potato, & Cheese Quesadillas

The possibilities are endless when it comes to filling a quesadilla.  I made chorizo, potato, and cheese ones the other night and they were so tasty!


Simply peel and boil one potato and cut into cubes.  Remove the chorizo from the casing and brown just as you would ground beef.  Melt a little butter in the pan, add a flour tortilla, put ingredients on one side, fold in half, and crisp up both sides.


I serve with fresh tomato, sour cream, and a side of avacado mash.  The avacado mash is 1 avacado (mashed), 1 garlic clove (chopped), and a little salt and pepper.  I could eat this on top of everything!
