Bacon & Pancakes

I had some girlfriends over on Saturday night and we got to talking about bacon.  Good Saturday night conversation, right?  I think so! 

Anyway, it reminded me that I wanted to share a tip for perfectly cooked bacon...in the oven.  I grew up with my mom frying it on the stove, and I have always done that myself, because it just tastes better.  The crispier, the better, for this family! 

Love me some bacon, but hate the smell that lingers all day.  You feel like you have to wash your hair and clothes immediately after cooking it and you could come home 10 hours later and your house still smells!

I got this tip from somewhere and I can't recall the source.  Place the bacon in a 9 x 13 baking dish, put in a cold oven, crank up the temp to 400 degrees, and cook for 20 minutes. 



It turns out crispy and delicious without the bacon haze!


I also recently tried the Pioneer Woman's Lemon-Blueberry Pancakes.  It was such a great combination of flavors.  The recipe calls for evaporated milk, which might be the key.  I would definitely recommend!
