Best Banana Bread Ever

We are "snowed in" today. The highways and schools are closed due to a small amount of snow (and ice)...that is how the south rolls! I am not complaining because Steve is home today and the kids are happily playing and I actually got to take the dogs for a nice walk by myself. Being "walked" by 300 pounds worth of dog on icey roads can prove to be a bit challenging but Samson's arthritic knee needed some exercise!

I decided to whip up a banana bread to munch on. I really mean "whip up" as it takes about 5 minutes to prep before going in the oven!

I am not sure who gets the original credit for this recipe, but I got it from my mom a long time ago and have never made another banana bread recipe since! This is Steve's favorite treat, and the kids also like it for breakfast.

Sour Cream Banana Bread

1/2 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla

1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

1 cup mashed bananas (I use about 3 very over ripe ones)
1/2 cup sour cream

Grease loaf pan. Cream together butter, sugar, eggs, vanilla. Add dry ingredients, then bananas, and then sour cream. Mix well. Pour into loaf pan. Bake at 350 degrees for 1 hour. Let cool before cutting. Delish!
